Cerviche This is my own invention, sort of. A couple of years ago I participated as a judge in an office party salsa contest, and after voting for one I didn't much like, just because no one else had (I didn't want anyone to get their feelings hurt! and then found out that it was a commercial brand that had been entered because there weren't enough participants!), I put together some ideas from the various salsas that I had liked, and this is the result. You could add seafood to make it really elegant.
Colorful Coleslaw This is a pretty and festive looking dish. The yellow/orange peppers make it look summery, using just the red and green gives it a Christmas-y look. Try adding a little chopped cilantro.
Eggplant Antipasto I once had a similar salad at a deli, so I recreated this one. You can actually use whatever vegetables you like. Just don't overcook. |
