Cerviche

Ingredients
  • 3 lg or 5-6 small tomatoes
  • 1 medium sweet onion
  • 1 sweet red pepper
  • 1-2 jalepeno peppers
  • 1/2 bunch cilantro
  • 2-3 tablespoons capers, plus juice
  • 1 large clove garlic, crushed
  • juice of 1 lemon
  • cumin to taste
  • salt & pepper

Chop the tomatoes, onions and cilantro. Finely mince the jalepeno peppers. Add the garlic, lemon juice, capers, and spices. Adjust all ingredients to taste. Stir well. Refrigerate several hours and serve with tortilla chips.
