Ingredients
- 1/2 (medium) head of green cabbage
- 1 teaspoon kosher salt
- 2 teaspoons sugar
- 1 large carrot
- 1/2 small green bell pepper
- 1/2 small red pepper
- 1/2 small yellow pepper
- 1/2 small onion
- 1/2 small clove garlic, minced
- 1/4 cup peanut or soybean oil
- 1/4 cup white vinegar
- Freshly ground black pepper, to taste
Slice the cabbage into thin shreds. In a large bowl, place the shredded cabbage and sprinkle with the salt and sugar. Mix well. Cover with an inverted plate and set aside for 1 hour or so to wilt. Mix in the shredded carrot, peppers, onion, and garlic. Pour over the soybean oil and vinegar, and season with black
pepper. Chill and adjust the sugar, salt, pepper, and/or vinegar to taste.
